  • Pastry blender or food processor (for making the crust)
  • Rolling pin
  • Pie dish
  • Paring knife
  • Cutting board
  • Mixing spoon or spatula
  • Pastry brush (for applying egg wash)

Basic Pie Crust

  • 2 1/4 cups all purpose flour
  • 1 tsp salt
  • 3/4 cups plus 2 tablespoons shortening
  • 1/3 cup cold water

Instructions

  1. ADD flour and salt to a large mixing bowl.
  2. STIR dry ingredients together.
  3. CUT in 2/3 of the shortening to the flour and salt until the mixture is like corn meal.
  4. CUT in remaining 1/3 of shortening until mixture resembles large peas.
  5. SPRINKLE water, 1 tablespoon at a time, while tossing with a fork. Add only enough water to make mixture cling together. It should not be wet or slippery.
  6. DIVIDE dough in half.
  7. ROLL out each half on a floured surface.

Apple Pie Filling

  • 3 pounds MacIntosh apples, peeled, cored, and sliced
  • 2 tablespoons cinnamon
  • 3/4 cup sugar
  • pinch salt
  • 1 tablespoon butter

Instructions

  1. COAT apples with cinnamon-sugar-salt mixture in a large bowl.
  2. PLACE one half of the prepared crust in bottom of pie plate or tin.
  3. FILL bottom crust with apples.
  4. DOT apple mixture with butter.
  5. COVER with top crust
  6. POKE top crust with a fork to vent steam.
  7. BAKE in an oven heated to 425 degrees for about 40 minutes.

Betty’s Pro Tips

  • After you peel, core and slice your apples, sprinkle them with a little lemon juice to keep them from browning.
  • Once you coat your apples with the cinnamon-sugar-salt mixture, let the apples rest at room temperature so they release their juices.
  • Lower heat slightly if pie is browning too fast. A pie crust shield is a great way to save your crust from scorching, but you can achieve almost the same results by getting crafty with aluminum foil.
